Weyermann® CARAFA® Special Type 2 is a dehusked roasted malt that delivers smooth, refined roasted flavors with none of the harsh bitterness often found in dark malts. With a color range of 400–500 Lovibond, it imparts an opaque black hue and rich notes of dark chocolate, coffee, and roasted nuts.

This malt is ideal for Stouts, Porters, Schwarzbiers, and other dark beer styles where depth and complexity are desired without excessive astringency. It provides a balanced roasted profile that complements both malt-forward and hop-forward recipes.
Role in the Brewhouse
By removing the husk before roasting, Weyermann® CARAFA® Special Type 2 minimizes tannin content, ensuring a clean, elegant roasted character. It adds dramatic color, enhances body, and provides a smooth roasted backbone, making it an excellent alternative to standard black malts.
Brewer’s Guidance
Use CARAFA® Special Type 2 at 1–5% of the grist for subtle roasted complexity, or up to 10% in robust dark beers for full-bodied chocolate and coffee character. Its dehusked refinement makes it perfect for achieving smooth flavor in both ales and lagers.
