Dingemans Biscuit® Malt is a lightly roasted specialty malt that brings a warm, toasted flavor reminiscent of biscuits or crackers. With a color range of 18–27 Lovibond, it imparts a light amber hue while adding layers of toasty, nutty complexity to the finished beer.
Where It Shines
Biscuit Malt is well-suited for Belgian Ales, Amber Ales, and Porters, where its rich, toasty notes complement malt-forward profiles. Its unique character also enhances balance in a wide variety of other beer styles, adding depth without overpowering the base malt.
Role in the Brewhouse
As a roasted specialty malt, Biscuit® contributes color, aroma, and flavor but contains no diastatic power. It should be combined with base malts for conversion and used to build complexity, body, and flavor stability in recipes.
Brewer’s Guidance
Add in small quantities (5–10%) for subtle malt depth, or use up to 20% of the grist for a more pronounced toasty, biscuity character. Its versatility makes it a reliable way to create rich, flavorful beers with a distinct malt signature.
