WLP618 is a non-conventional yeast (Saccharomycodes ludwigii) developed for brewing low-alcohol and non-alcoholic beers. Selected for its lower ethyl acetate production, it produces cleaner flavors than similar NA strains.
This strain is maltose-negative, meaning it does not ferment maltose or larger sugars, only simple sugars such as glucose, sucrose, and fructose. This makes it ideal for NA brewing when paired with the right recipe and mash profile.
